Easy Avocado Recipes – Avocado Pasta Salad

Move over pesto (for a bit, at least)! Avocado’s here to give that pasta a delicious twist.

Prep time: 5 mins

Cooking time: 15 mins

Serves: 2

Ingredients:

1 whole ripe avocado (about 300-350 grams)

200 grams – Pasta of your choice

4-5 cloves of garlic

6-7 fresh basil leaves

Parmesan slices (optional)

2 tablespoons olive oil

Salt & pepper

Procedure:

Cook the pasta in water with some oil and salt.

While the pasta is cooking, blend the avocado, basil, garlic and one tablespoon oil in a mixie/ blender, until smooth.

Once cooked, strain the pasta and cool it completely before adding the avocado dressing.

Mix well and top it off with some parsley, basil and a drizzle of olive oil.

Serve chilled!
