Mac & Cheese

There are several recipes for this all-time favourite comfort food, and they’re all just amazing!

Here I show you a simple style of preparing this one dish that people across ages absolutely love.

Preparation time:10 minutes

Cooking time: 45 minutes

Serves: 6

Ingredients:

2 cups pasta of your choice (avoid spaghetti)

1 1/2 cups milk

1/3rd cup all-purpose flour

4 tablespoons butter

2 tablespoons olive oil

1 tablespoon chopped fresh parsley

Lots of cheese! ๐Ÿ™‚ – I’ve taken a mix of the following:

150 grams Cheddar

100 grams Gouda

100 grams Parmesan

100 grams Mozzarella (optional)

Salt to taste

Procedure:

Boil the pasta in a pot of water with a little salt and oil until its about 80% cooked.

While the pasta boils, start prepping the cheese sauce by heating a pan and adding oil and butter to it. Keep stirring until the butter melts.

Once the butter has melted, add the all-purpose flour and keep stirring for a couple of minutes. This mix will seem lumpy at first but will smoothen once we add the milk.

Once the flour and butter have been well combined, start adding the milk gradually and keep stirring for three to four minutes.

Add some salt to the mix but not too much, keeping in mind that the cheese already has salt. You can always add more later if you’d like, depending on your final selection and quantity of cheeses.

Once the mix has been cooked for a few minutes, add the cheeses, leaving little for later, and stir until it all melts.

Check the pasta, and if done, strain and add to a mixing bowl.

Pre-heat the oven to 375 degrees Fahrenheit.

Take the sauce off the heat and pour over the strained pasta and mix it well. Line the baking dish with half the quantity of the pasta, sprinkle the mozzarella over this layer, followed by the parsley. Add the remaining pasta on top, followed by some more mozzarella and the cheeses that we kept aside earlier. This will give the dish a nice golden cheesy crust. Top it off with a sprinkle of parsley and pop it in the oven for 25 to 30 minutes.

Serve hot!
